In 香道 (こうどう), the traditional Japanese art of appreciating incense, people don't normally say they “smell” incense—they say they “listen” to it (香を聞く). A small piece of fragrant wood is heated, and participants carefully draw the fragrance in with their breath. In one traditional method, they take three breaths (三息) to appreciate the scent. The practice treats fragrance almost like music: something invisible that you experience carefully rather than simply sniffing.
