In Japan, “wari” appears in drink names such as “水割り (mizuwari)”—whisky mixed with water—and “お湯割り (oyu-wari)”, shōchū mixed with hot water. The idea is literally about dividing or mixing something into portions. One drink can therefore have a completely different character depending on the ratio of ingredients. Japanese bartenders and drinkers have long paid attention to these proportions, especially with traditional spirits such as shōchū.
